Wild Food Cookery Workshop

An educational, informative and fun foraging session will be followed by a wild food cookery demonstration, where you will learn how to make seasonal and unique foraged preserves.
We start with a foraging walk where you will learn about the native Irish seasonal plants and herbs that we find, with plenty of tips on using them to create tasty and nutritious wild food dishes. We will focus mainly on the culinary uses of the plants but we will also cover some basic information about their medicinal uses and interesting folklore.
Plant identification, safe foraging and sustainability is an important element of this workshop. You will learn about the Forager’s Code, that encourages safe, respectful and responsible foraging. Safety is key, so the focus will be on giving you the knowledge that will allow you to continue to forage on your own with confidence.
While edible wild plants are tasty and highly nutritious, they usually have a short growing season and need to be harvested within a relatively brief timeframe when they are abundant and at their best. Learning how to preserve wild plants and berries using traditional methods is a useful skill for the aspiring forager.
This workshop will teach you the best methods to use to preserve your wild foods and make delicious preserves and condiments. As you build your wild food pantry throughout the seasons, you will be able to use these delicious, foraged treats to quickly elevate an ordinary meal into a gourmet delight.
We will finish with a cookery demonstration where you will learn how to make a selection of preserves with the ingredients that we have foraged.

What should I wear?
Please wear sturdy, waterproof shoes or boots and bring a rain jacket, as we’ll be outdoors in all conditions.
What should I bring with me?
A notebook is useful for taking notes or pressing leaves and flowers. A small bottle of water is recommended for rinsing wild leaves before tasting.
